Tips From The Kapusta Patch: Mushrooms
Reported health benefits: There are no special health benefits for mushrooms other than the benefits ordinarily derived from the many vitamins and minerals found in this food.
Preparation: Mushrooms are prepared in many forms. They are baked, broiled, and creamed, as well as used with other foods. They are popular with eggs made into omelets or scrambled. They are often combined with other foods into sandwiches and are popular in soups.
A good cream of mushroom soup is prepared by washing and skinning one-quarter pound of mushrooms and simmering the skins in one-half cup of water. The mushroom caps and stems should be chopped into small pieces and two cups of water added to the skins. The simmering should continue until the skins are tender. Melt two tablespoons of butter, adding two tablespoons whole wheat or soybean flour and one teaspoon salt. (Salt may be omitted when anyone is on a salt-free diet.) Two cups of milk should be added gradually over a low flame, stirring constantly until the soup thickens. The chopped mushroom should then be added, and when ready to serve, add chopped parsley.
