Tips From The Kapusta Patch: Blueberries
Reported health benefits: Blueberries are known as blood cleansers and for antiseptic use. They are recommended for anemia, constipation, diarrhea, obesity, menstrual disorders and poor skin complexion. The antiseptic value of blueberries is apparently what helps conditions of inflammation of the intestines known as dysentery, which in turn contributes to the condition of diarrhea.
Preparation: In addition to partaking of blueberries as a side dish or dessert as part of a meal, a very popular food delicacy is the blueberry muffin. By making a few substitutions to eliminate the white sugar and white flour from the recipe, a fairly healthy product can be produced.
For about a dozen muffins, take 2 cups of whole wheat flour and mix with four teaspoons of baking powder and one-half teaspoon of salt, although salt should be omitted if anyone has high blood pressure and/or is on a salt-free diet. One egg is then beaten into a cup of milk and ¼ cup of honey, in lieu of sugar. One-quarter cup of butter, peanut oil or other pure vegetable oil should then be added to the liquids and beaten well. The mixtures are then combined after first adding a cup of blueberries to the dry ingredients. There is only a small amount of mixing, just enough so that the flour becomes damp. If not mixed excessively, the muffins will be of a fine texture; otherwise they may fall flat. The mixture is poured into muffin pans only 2/3 full and baked in an oven previously heated to 400 degrees F for twenty-five minutes.
