Tips From The Kapusta Patch:  Apple

Reported health benefits:  The apple stimulates all body secretions and is well known not only as a food but a s a beverage (apple juice), health tonic, medicine, cosmetic, and bowel regulator all in one.  The large variety of minerals and vitamins strengthens the blood.  Apples also contain malic and tartaric acids, which help prevent disturbances of the liver and digestion in general.  It has been reported that where unsweetened apple cider is used as a beverage, the formation of kidney stones is unknown.  The low acidity of the apples stimulates salivary flow and thus helps to remove debris from the teeth and stimulates gum tissues.  Studies also indicate that eating apples daily will reduce skin diseases, arthritis, and various lung and asthma problems.  Apples are said to prevent emotional upsets, tension, and headaches.  The rind or peel of the apple contains pectin, which helps to remove noxious substances from the system by supplying galacturonic acid.  The pectin helps to prevent protein matter in the intestines from spoiling.

Apples have also been recommended for obesity correction, skin, eruption, poor complexion, inflammation of the bladder, gonorrhea, anemia, tuberculosis, neuritis, insomnia, catarrh, gall stones, worms, halitosis, and pyorrhea.

Preparation:  Every effort should be made to avoid fruit sprayed with poisonous pesticides.  The best way to eat them is to wash them and eat them unpeeled in order to avoid losing the nutrients and beneficial substances that are part of the skin.

In addition to the apple juice drink, an apple tea is popular with many people and it is said that this will cleanse the urinary tract and help various diseases of the male and female reproductive organs.  The apples are sliced with the peeling left on.  The slices are placed in a pan lined with white paper and the pan is then placed in a moderate oven (350 degrees) with the oven door left open.  When the slices are thoroughly dried, the oven door should be closed and the apples roasted until they turn a dark brown color.  The slices are then stored in a dry  place until needed.  The tea is made the same as other tea.  The slices are placed in a cup and hot water poured over it, and steeping goes on for about ten minutes before there has been sufficient absorption of the ingredients of the apple.

There is actually an unlimited number of ways of preparing apples.  They are often cut into slices and served with other fruit in a salad or they are included in cake, cookie, and pie recipes.

A delicious apple pie pudding is made by slicing the apples, adding enough honey to sweeten and combining with a little lemon juice and sufficient water so all the ingredients will mix well.  If desired, some graham cracker crumbs may be added.  The mixture is then turned into an oiled baking dish and baked in a moderate oven (375 degrees) for thirty minutes or until the apples are tender.
